Banana and Biscoff Waffles
I have been following Slimming World now for few weeks and I have been trying out different recipes and also creating my own as I go. One of my favourites so far is Biscoff and Banana Waffles using Weetabix. They are really good and definitely fill me up till lunch time if not longer.

Ingredients for Banana and Biscoff Waffles

Biscoff and Banana Waffles Recipe

Ingredients

  • Weetabix ( 1 Weetabix makes approx 2 waffles and 2 Weetabix makes approx 5)
  • Muller Light Yoghurt (Any flavour) or Quark
  • 1 Egg
  • 1 teaspoon of sweetener
  • 1 tablespoon of Biscoff smooth or crunchy spread
  • 1 Banana
  • Fry light
  • Waffle Mould

Instructions
  • First crumble the Weetabix into a bowl. It should have no hard lumps in
  • Add the egg and the yoghurt or quark
  • Mix until it has a creamy texture and no lumps
  • Sprinkle the teaspoon of sweetener into the mix
  • Spray your waffle mould with Fry Light to prevent sticking
  • Pour out your mixture in to the waffle mould evenly - do not overfill
  • Once the mixture is in the mould pop in the oven for 25 minutes on 200°c
  • Check the mixture is dry inside before removing from the oven
  • Once cooked leave to cool for 1-2 mins then turn the waffle mould over on a plate to release the waffles
  • Using a knife spread the Biscoff spread over your waffles and add sliced banana
  • If you prefer you can sprinkle another teaspoon of sweetener over the waffles
