Slimming World Slow Cooker Lasagne Recipe


Recently I bought myself a slow cooker and I've made a few things in it so far but our favourite last week so Slimming World Slow Cooker Lasagne. I've just started my Slimming World journey so I will be making more meals but for now I thought I would share with the Lasagne recipe.
We are not vegetarians however we do prefer Quorn mince to normal mince so if you don't like Quorn just subsitute for normal lean mince.

To make the lasagne sauce you will need 

500g bag of Quorn Mince or 400g of lean beef mince
1 x tin of chopped tomatoes
500ml passata
2 tbsp tomato puree
1 large onion, chopped
2 garlic cloves, minced

How to make the Lasagne sauce 

In a large frying pan spray Frylight or a little dash of olive oil. Heat over medium to high heat, add the onions and the garlic. Stir in for approx 1 minute.

Now add the Quorn Mince or Lean Mince. Stir occasionally until Quorn Mince looks wet and brown or if using lean mince until no pink meat remains.

Add the chopped tomatoes, passata, tomato puree and stir well. 

If you wish to add any vegetables e.g. - mushrooms, peppers etc - add now. Keep stirring for a few minutes.

While that is bubbling over medium / high heat you can start preparing the white sauce.  

To make the White Sauce you will need

340g fat-free Cottage Cheese
250g Quark
Reduced fat Mozzarella 

Add all of the above into a bowl and mix together well. I blend mine so the 'lumpiness' from the cottage cheese is smoother.

At this point you will also need 

280g lasagne sheets

Spoon a quarter of the lasagne / meat mixture into the slow cooker, top with a few lasagne sheets and then spread over the top a quarter of the cheese mixture and then keep repeating until all mixtures have been used. 

Cook on a low heat for 5 hours with the lid on.

Tastes yummy and we served with steamed vegetables.
